This is a cut of pork from the shoulder that is often overlooked. You may have had the cured version, but this is it in its raw state. It’s marbled like a good steak so BBQs nicely without causing a lot of flare ups.
Season with salt and pepper and grill on high to get some good grill marks then turn the heat down, close the bbq lid and leave it for about 8 minutes. At about 6 minutes in give it a little glaze with some honey or maple syrup.
